    How microbes craft cheese flavors Although humans have worked on mastering the art of cheese fermentation over thousands of years, researchers knew little about the microbial community interactions that occur as milk turns into cheese. A new article in the publication The Scientist describes a research project led by our colleague, bioengineer Ahmad Adel Zeidan, explaining how microbial interactions affect cheese flavor formations. The findings could be used for cheesemakers to finetune cheddar characteristics, for instance. The team chose cheddar cheese as a model system because its composition of 25 to 30 bacterial strains provided an intermediate level of microbial complexity to work with. They then assessed the effects of specific bacterial strains on cheese flavor by removing either a single strain or a group of strains from the starter culture. “This work advances the field by figuring out what needs to be done to make cheese taste the way we want it to taste,” said Maria Marco, a microbiologist at the University of California, Davis, who was not involved in the research. “It shows the complexity of microbial environments.     Novonesis: Worldwide biosolutions for agriculture In a new article by the publication New AG International, our colleague Tina Sejersgård Fanø, EVP of Planetary Health Biosolutions, talks about the prospects of Novonesis in the agricultural space. “As Novonesis, our powerful technology toolbox will enable us to expand our portfolio toward specialized, high value biosolutions that drive long-term growth. We have a unique library of strains – both in size, complexity and accessibility. This is one of the world’s biggest sources of commercial strains that we can use to bring groundbreaking innovations to market,” she says. She also elaborates our portfolio of biosolutions in this area of our business:  “We have expanded our Plant Biosolutions portfolio by combining a portfolio of biological solutions made from naturally occurring microbes and enzymes. These solutions help farmers increase crop yields, protect crops against diseases and pests, make plants more robust, and improve water and nutrient efficiency.     "In order to continue to thrive, we must learn from nature."   In this video, we are joined by Professor Katherine Richardson, Sustainability Science Centre at the University of Copenhagen (Københavns Universitet), for a conversation about modern civilization and nature.    "Our challenge for modern civilization is to pretend we're nature and learn from nature, to have a 100% circular economy just as nature does, and to use the resources on this Earth as efficiently as possible," she says.     She also talks about whether people in more primitive societies live in better harmony with nature and what we can do to get inspired by nature for modern life.    "Even though scientists have tried for a very long time, we are not as smart as plants yet.     Celebrating and embracing inclusion and diversity ❤️     Over the past few weeks, our colleagues from around the world have marked the importance of diversity and inclusion by participating in local activities and events during Global Pride Month.     Among others, we used the opportunity to zoom in on active allyship in a global live interview session with Dr. Dr. Poornima Luthra (She/ Her), Associate Professor at Copenhagen Business School. Professor Luthra shared her perspective on what each and every one of us can do to nurture inclusive relationships with our colleagues and create an environment that values diversity.  At Novonesis, we believe that by embracing and respecting differences, fostering inclusion, and ensuring that everyone feels a sense of belonging, we are cultivating a truly inclusive and diverse workspace.     Accelerating the tech-driven bioeconomy Our CEO Ester Baiget is co-author of the foreword for a new report by World Economic Forum. The report is focusing on the global transition to a bio-based economy. “The bioeconomy is here. An array of biosolutions are already on the market today, providing life-saving cures and driving decarbonization in transport, agriculture and food, manufacturing and other sectors. Given the significant potential to deliver better outcomes for people and the planet, now is the time to unleash the true power of biosolutions,” the foreword reads. The report discusses how challenges can be overcome to accelerate the transition to a commercial bioeconomy. With input from leaders from government, business, academia, research organizations, and civil society, it examines how a growing embrace of biological engineering as a key commercial technology is prioritizing the planet and its inhabitants. As enabling technological advances continue to evolve and extend the reach of generative biology, the stage is set to accelerate the tech-driven bioeconomy and maximize its commercial impact.     Celebrating the opening of our innovation hub in Germany Recently, we marked the opening of our new Customer and Application Center in Polheim, Germany. The state-of-the-art site enables our customers to test different cultures to improve food safety, productivity, taste and more. “This is where we develop the future of food together with our customers. Our biosolutions can help food processors produce more with less, decrease food waste, and enhance food safety. Biosolutions can provide options to further reduce nitrites and nitrates in cured meats, or customers can learn how to reduce plastic packaging. We can even add texture and authenticity to plant-based meat alternatives. And of course, taste is always in focus here, no matter the product,” says Johan Weimann, President of Region Europe at Novonesis. The opening was celebrated at an event and ribbon-cutting ceremony with about 150 guests from 21 countries from Europe, North and South America, Australia and Asia including among others customers, distributors, retailers, scientific partners, politicians and authorities. The new Novonesis Food and Protein team worked closely together to make this event a success.     Last week, our colleagues took part in the Danish Democracy Festival, The People's Meeting (Folkemødet), on the island of Bornholm. The event facilitates democratic dialogue between civil society, politicians, businesses, universities etc. For the second time, we had a dedicated scene and lounge to discuss and showcase how biosolutions can be a key enabler in the global green transition.   Besides engaging in different debates on topics such as how to unleash the full potential of biosolutions or the potential of AI within the biosolutions sector, our EVP Claus Crone Fuglsang also discussed how Novonesis can play a role in driving climate action and sustainable agriculture. We also had the chance to showcase and demonstrate some of our many biosolutions for visitors at 'BIOscenen'. VP Hans Ole K. and Science Manager Mette Holse held science talks while serving plant-based hotdogs and coffee made with our technology to showcase how our solutions can make the plant-based food tastier while reducing the climate impact.
