Responsibilities And Duties
Wash, peel, chop a variety of different vegetables, meats and fruits.
Measure and prepare ingredients in accordance with Chama Mama recipes
Assist in marinating meats, preparing sauces, and pre-cooking items
Portion all prepped items according to the Chama Mama recipe portioning size
Ensure ingredients and supplies are well organized and accessible to all staff
Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, and taking out trash
Assist line cooks and chefs with basic cooking tasks during busy periods
Keep track of ingredient inventory and notify the Kitchen Manager or General Manager of low stock
Assisting Commissary and Catering Director in keeping track of product, production and labeling
Assist in receiving and organizing food deliveries
Adhere to the Department of Health food safety and handling policies and procedures across all kitchen operations
Maintain a clean and safe work environment in compliance with health and safety standards
Qualifications
Proven experience as a commissary or central kitchen prep cook or relevant role in a kitchen, cafe or hotel
Experience in high volume cooking and prepping product
Experience in packaging and sealing product for delivery
Familiarity with various cooking methods such as grilling, baking and boiling
Familiarity with ingredients, different types of equipment and procedures
Ability to read and follow recipes and instructions
Ability to work independently and as part of a team
Excellent time management and multitasking skills
DOH certificate/ license preferred
Ability to work under pressure in a fast-paced environment
Good physical condition and stamina
Physical Requirements
Ability to stand or walk for extended periods of time
Ability to lift at least 50 pounds or more
Ability to lift and carry heavy items such as pots, pans, bulk food items
Ability to work in a hot or humid environment at certain times
Ability to frequently move around the kitchen including reaching and bending
