Ciabatta Pizzas

Arabic food makes perfect social snacking material… mezes are great to pick at

Serves 2

A light crusty ciabatta slit in two and topped with successive layers of colourful good things makes an authentic-tasting pizza to rival any takeaway. Tapenade is the only ready-made sauce you’ll need.

1 small red onion, sliced thinly
4-6 tbsp olive oil
1 fat clove garlic, crushed or chopped
1 ciabatta loaf
1 small jar black or green olive tapenade (about 4 tbsp)
3 plum or medium-size vine tomatoes
Several pinches dried oregano or 4-6 leaves fresh basil, torn
300g fresh mozzarella, sliced
4 tbsp fresh parmesan
About 100g thinly sliced Milano salami or sliced pepperoni
Sea salt and freshly ground black pepper

1 Heat the oven to 200C, Gas 6. Saut? the onion slices in 2 tablespoons of oil with the garlic
