I love this recipe because skirt steak is an underrated cut of beef, but it’s a favorite for a lot of chefs — including me. The cilantro mint sauce is easy to make in a food processor or blender and it’s bright and fresh for the steak.
Technique tip: After you’ve cooked your steak and let it rest, cut your slices against the grain because doing so creates a more tender bite.
Swap option: If you have a strong aversion to cilantro you could swap for a more favored herb such as parsley.
