I've always loved ranch dressing but wanted to recreate the flavor profile with more nutrients. This recipe is creamy from the nutritional yeast and cashews, and bursting with flavor thanks to the quintessential ranchy herbs (dill and chives).

Technique tip: Add all the dressing ingredients to the blender in the order listed so it blends well.

Swap option: You can use whatever fresh herbs you have or love to create a flavor profile just for you.

Equipment needed: High-powered blender or food processor.

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 2 lemons, juiced (about 1/3 cup)
  • 1 small shallot
  • 2-3 cloves garlic
  • 1 cup fresh spinach
  • 1 cup fresh chives
  • 1 cup fresh dill
  • 1/4 cup nutritional yeast
  • 1 cup raw, unsalted cashews
  • 1 scallion, trimmed
  • 1 teaspoon fine sea salt
  • 1 head iceberg lettuce

Preparation

Add the olive oil and lemon juice to a large high-powered blender. Cover with the shallot, garlic, spinach, chives, dill, nutritional yeast, cashews, scallion and salt, and pulse until the dressing is smooth.

Chop the iceberg into small pieces and place in a large bowl.

Pour the dressing over the iceberg in the bowl and mix well to evenly coat. Serve immediately.
