Remember when baked feta took over TikTok? Since then, there have been countless iterations of this genius method. This recipe builds a weeknight dinner around baked feta, all on one pan. 

Once the concept of a sheet pan dinner took the country by storm, there was no going back. The idea is straightforward enough — everything for your meal goes on a sheet pan and bakes together. It’s the perfect solution for those dinners where you’re looking for something hearty, but just don’t have the energy to bust out multiple pots and pans. Plus, sheet pan dinners make cleaning up a breeze. 

With some sheet pan recipes, you need to stagger when ingredients go on the baking sheet and into the oven. Here, everything can go on at the same time. The recipe is simple, but all these bold flavors come together while roasting to make a truly stand out dish. Start by tossing tomatoes and broccolini with olive oil and seasoning. Then, add the sausage and feta to the sheet pan. Pop it in the oven and bake until the sausage is cooked through, the broccolini is crispy, the feta is melty and the tomatoes are jammy. 

Technique Tip: Make sure not to overcrowd the pan — it’s important that each ingredient is touching the pan bottom to get crispy, rather than being piled on top of each other. 

Swap Option: Any type of sausage will work here — from kielbasa to chorizo to sweet Italian sausage. You can even use a plant-based sausage to make this dish vegetarian. If you can’t find broccolini, broccoli is a great swap. 

Ingredients

  • 2 cups cherry tomatoes
  • 2 bunches broccolini, ends trimmed
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound hot Italian sausage
  • 1 (6-ounce) package feta, cubed into 1-inch pieces

Preparation

Preheat the oven to 425 F.

Add the tomatoes and broccolini to a rimmed baking sheet and drizzle with olive oil. Season with salt and pepper and, using your hands, toss to combine.

Arrange the sausage and feta slices all over the baking sheet.

Place the baking sheet on the upper third rack and bake until the sausage is cooked through and broccolini is crispy, about 25 minutes. Serve immediately.
